Shavuot recipes — the dairy holiday, the one that celebrates receiving the Torah and (more importantly to me) eating cheesecake for two days. Blintzes, cheesecakes, quiches, cheese-stuffed everything, and dairy mains that prove the meal can carry without meat.

Cheesecake is mandatory. Plain New York-style is the baseline; from there, every flavor on the planet (chocolate, lemon, strawberry, even savory). Blueberry blintzes — crepes filled with sweet cheese, optionally drizzled with blueberry compote — are the brunch dish that doubles as dessert. Shakshuka (eggs poached in tomato sauce with feta) covers the savory side and feeds eight with one pan.
