WTH is Jewish Guacamole, you ask? It’s just like your favorite guac, but with hard boiled eggs and gribenes on top!

(Amy, these are not latkes!) I know, it’s smack in the middle of latke time, and here I am sharing guacamole (silly, Texan!) But, we need latke toppings, right? How good would a scoop of this Jewish Guacamole? Did I get your attention?

But what is Jewish guacamole? I sure do love chips and guac. It’s my weakness! This Jewish spin is inspired by the time I met Mexican Jewish chef Pati Jinich. She told me her Bubbes were inspired as Jews in Mexico. Gefilte fish in a Veracruz sauce anyone? Or hardboiled eggs in guacamole. I used Lipton Kosher Ranch Mix as seasoning to make it super easy. And topped everything off with fried chicken skin aka gribenes because of course I did!!

Lots of tomatoes, cilantro, red onions if you got ’em. And of course eggs! It sounds weird, but it tastes like extra tasty egg salad.
Jewish Guacamole Serve immediately- I used bagel chips because duh.

Ingredients

  

  • 2 large avocados
  • 2 plum tomatoes diced
  • 1/4 cup red onion diced
  • 1/4 cup cilantro chopped
  • Juice from 1 lime
  • 1 1/2 – 2 tablespoons Lipton Kosher Ranch Mix
  • 2 hard boiled eggs diced
  • 2 tablespoons gribenes
  • Bagel chips for serving

Instructions

 

  • In a large bowl, mash up avocado. Use a whisk to get varied texture! That’s a trick I learned once.
  • Anyway, then stir in tomatoes, onion, cilantro, lime juice and Lipton Kosher Ranch Mix. Then gently mix in eggs, spoon into a serving bowl and top with gribenes. Serve immediately!

    Will this recipe keep overnight?

      Hi Donna,
      Like all guacamoles, it will brown if it sits too long. I would make it fresh and garnish right before serving! You can make the eggs up to a few days ahead of time.
