It’s everything you love about tzimmes wrapped up in a convenient fried blintz! Prunes optional, but wouldn’t Bubbe want you to include them??

How perfect is this combo for Rosh Hashanah, Thanksgiving, or a random Fall day? You can even eat them for breakfast! I won’t stop you.

Tzimmes Blintzes

What are tzimmes blintzes? Let me tell you! I made a mashed sweet potato and carrot mixture, sweetened with brown sugar and honey, and folded in some prunes because my Bubbe would want me to. Fried in a Jewish crepe aka a blintz. And topped it all off with a cardamom yogurt sauce! Sweet, creamy, tart and rich, with some crunchy walnuts for garnish.
