You can’t have Rosh Hashanah without honey- duh! But don’t use just any honey. Lavender Honey is among the most prized varietals of honey, and this one is from Southern Spain. Its light color, slightly purple hue, and gentle flavor notes make it particularly complimentary in mild tea and as a sugar substitute in baking. And it’s kosher!
