Matzo Ball Soup meets Egg Drop Soup is just the ultimate comfort food!


It’s almost the most magical time of the year! No, not Christmas, gentiles can keep their eggnog and gingerbread cookies. Okay, I’ll take one cookie. I mean national Eat Chinese Food and Watch a Movie Day. While this isn’t exactly a real holiday yet, give it a few years. It will catch on. Normally, we get takeout a settle in with Home Alone ( 1, 2 or 3. Not 4). But I like to experiment from time to time. Whole Foods gave me a $25 gift card to craft up some seasonal recipe using any of their kosher products. (And scroll down below to win a gift card of your own to experiment with!) I tried the Organic Imagine Kosher Chicken broth below and I was super impressed with the taste and texture- the closest to homemade I’ve ever seen! And perfect for my Egg Drop Matzo Ball Soup.

First, make your matzo balls. Whisk 1/2 cup of stock with eggs. Then whisk in matzo meal, onion, oil (or schmaltz!) salt and pepper. Since the dough will be sticky, refrigerate it for 30 minutes. These are some sinker matzo balls, but feel free to use your Bubbe’s recipe if you like!
When you are ready to cook, form matzo meal concoction into about 12 1-inch balls.

Now, make your soup. Whisk 1/2 cup chicken stock with cornstarch. Bring remaining 9 cups broth to a boil with soy sauce and half of the green onions. Gently place matzo balls in broth and lower to a simmer and cover. Cook 30 minutes until matzo balls are cooked through.
Bring heat back up to a boil and drizzle in the remaining eggs in stream slowly and stir them in to make streams. Then add in cornstarch mixture to thicken.
Season with salt and pepper to taste and garnish with more green onions and serve.

Egg Drop Matzo Ball Soup
Ingredients
- 10 cups stock
- 3 eggs
- 1 cup matzo meal
- ¼ cup grated onion
- 3 tablespoons olive oil or schmaltz
- ¼ teaspoon salt plus more to taste
- ¼ teaspoon black pepper plus more to taste
- 1 tablespoon cornstarch
- 2 teaspoons soy sauce
- 1 bunch green onions minced
- 4 eggs plus 2 egg yolks whisked
Instructions

I have made this soup, people love it at my Chinese Seder, but the best part is that I add ground beef to the matzah ball so it is more like a wonton or as I call it a Matzaton.
