These Apple Tahini Streusel Bars are worthy of a Rosh Hashanah dessert. Or any other day for that matter!
Let’s party like it’s 5778, baby! I don’t know about you, but I am ready for a new year and am not waiting until January. Luckily, the Jewish new year of Rosh Hashanah is around the corner!
But let’s talk about the food. The most popular symbolic food for the Jew year is the combination of apples and honey. Why apples and honey, you may ask? Good question, my friend! Apples (from Adam and Eve) and honey (like the Land of Milk and Honey) are both sweet, so symbolize a sweet new year. You don’t have to tell me twice to enjoy more sweets.
While you could definitely dip an apple slice in a bowl of honey and call it a day, I like to get a little more creative. I partnered with Kroger’s Simple Truth Organic line to make these Apple Tahini Streusel Bars with Honey Drizzle! (Drool.)
I love this line because they have good quality, organic products, for a good price too.
These bars have three layers of awesomeness. First layer- buttery crust.
Topped by tart + sweet apples.
And then a tahini streusel!!
Oh they look good enough to eat. But we aren’t done yet.
I whipped up a little honey drizzle to tie the apples and honey theme all together. With the nutty tahini and crunchy sesame seeds it all just works. That’s more like it!

Apple Tahini Streusel Bars
Ingredients
- For crust:
- 1/4 cup Simple Truth Organic Granulated Sugar
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon Simple Truth Organic Madagascar Vanilla
- 1/2 cup cold unsalted butter cut into pieces (I grate mine with a large-hole cheese grater!)
- For apple filling:
- 2 large Granny Smith apples peeled and sliced into 1/4 inch slices, about 3 cups
- 2 teaspoons lemon juice
- 1/2 cup Simple Truth Organic Light Brown Sugar packed
- 2 tablespoons all-purpose flour
- 2 teaspoons cardamom cinnamon works well too
- For tahini streusel:
- 1/2 cup flour you may need a little more
- 1/4 cup Simple Truth Organic Light Brown Sugar
- 2 tablespoons Simple Truth Organic Tahini
- 2 tablespoons melted butter
- 1/8 teaspoon salt
- 1/4 teaspoon cardamom
- For honey drizzle:
- 1/2 cup Simple Truth Organic Powdered Sugar
- 1 tablespoon Simple Truth Organic Manuka or Orange Honey
- A splash of water or milk
- Sesame seeds for garnish
Instructions
- Pre-heat oven to 325 degrees F.
- Line an 8x8 inch pan with parchment paper, leaving a little overhang on the sides.
- In a large bowl, mix together the crust dry ingredients: sugar, flour and salt. Then add the vanilla and butter and mix with your hands, a pastry cutter or hand-mixer on low until it resembles wet sand.
- Press mixture evenly into the bottom of the pan and bake for 12-15 minutes until light brown.
- Meanwhile, prep your filling. Mix together lemon juice, brown sugar, flour and cardamom in a large bowl (I used the same bowl for the crust). Then add apples and toss until evenly coated.
- To make the streusel, mix together all the ingredients with your hands or a spoon until you have crumbly pieces. If the mixture is a little thin, add a little more flour.
- When the crust is ready, top evenly with apple pieces and top that evenly with streusel crumbles. Bake for 35 minutes until apples are bubbly and streusel is golden brown.
- Let cool for 30 minutes at room temperature, then cool overnight in the refrigerator (or at least a few hours).
- Lift out of the pan using parchment paper and cut into 12 pieces (or whatever you like!)
- Make the drizzle by whisking together powdered sugar and honey. Add a splash of water or milk if needed to make a glaze for drizzling.
- Drizzle glaze all over bars and sprinkle with sesame seeds. Eat!
- You can refrigerate the un-glazed bars for up to a week, or freeze for up to two months. Defrost and glaze before serving.
