I have good news. Great news, really. I decided what I am going to be for Halloween! Hooray! Normally I have my idea ready and the crafting started by July latest, so this is certainly last minute for me. Whew- sigh of relief. Do you know what you are going to be yet? I’d love to hear!

Like any good costume, this one involves glitter and a unitard. You read that right. So for the next few weeks I’m going to cut back on my schmear and brisket. Sigh. But before I switched over to egg whites and broccoli, I had one last hoorah with this grilled cheese. I used my cinnamon apple stuffed challah, the best sharp cheddar I could find and real butter. I’ll miss you, butter. See you November 1!

To start, I caramelized some sliced onions in olive oil. The secret to caramelizing is low and slow- it may take up to an hour to caramelize your onions! When the onions get real soft toward the end you can turn the heat up. I got a little impatient and mine are more on the sauteed side. It was 3 PM and I was hungry for lunch now!

Then butter both pieces of challah on the outside and top with lots of cheddar and onions. The apples in the bread are just awesome with the cheddar and onions. You could add more apples to the sandwich for a super appley sandwich. Plus fruit = healthy!

Cook in a pan until both sides are toasty, your cheese is melty, and your kitchen smells like awesomeness.

This costume better be worth it!

Ingredients
  

  • 2 pieces cinnamon apple stuffed challah
  • 2 pieces sharp cheddar cheese
  • 1/4 cup onions
  • Butter
  • Olive oil

Instructions
 

  • First, caramelize your onions in olive oil at a a low temperature until nice and soft, turn up heat at the end.
  • Butter the outer side of each slice of challah.
  • Pile your onions and cheese on your challah and cook in a pan until both sides are browned and the cheese is melted.
  • Slice and serve!
