Passover breakfasts don’t have to be boring! (Though I love me some matzah and butter in the morn’.) But this Cinnamon Apple Matzah Brei has got the others beat for sure!

Cinnamon Apple Matzah BreiHere’s a fun fact. It’s really, really hard to make matzah brei look attractive. Oh, I’ll just distract you with apples and egg shells and mini strainers. Then you won’t notice the pile of brown mush with a generous sprinkle of cinnamon I’m claiming as a recipe. Did it work?

But for as ugly as matzah brei is (sorry!) it’s just so delicious.

For those not familiar with this Passover treat, matzah brei is a delightful scramble of matzah (Jewish crackers), eggs, and either savory or sweet spices. Just trust me when I say it’s good. Even though you could technically make it any time of year, I reserve my matzah brei for Passover.Cinnamon Apple Matzah Brei

Cinnamon Apple Matzah Brei

Cinnamon Apple Matzah Brei

Matzah Brei is typically a savory breakfast of sautéed matzah and eggs, but there is no reason you can’t go sweet! This version has cinnamon sugar apples and a dollop of ricotta.

Ingredients
  

  • 1 apple (such as Fuji, or Jazz apples) washed, peeled and small diced
  • 1 tsp cinnamon plus more for garnish
  • 2 tbsps Imperial Sugar Light Brown Sugar, divided plus more for garnish
  • 2 tbsps unsalted butter divided
  • 2 pieces matzah broken into bite sized pieces
  • Warm water
  • 3 large eggs whisked
  • 1 tsp almond extract
  • ¼ tsp salt
  • ¼ cup ricotta cheese
  • 2 tbsps chopped walnuts or pecans for garnish

Instructions
 

  • In a medium bowl, toss together diced apple, cinnamon and 1 tablespoon brown sugar.
  • Heat 1 tablespoon butter in a large non-stick sauté pan over medium heat and add apples.
  • Sauté for 3-5 minutes or until apples are soft.
  • While apples are sautéing, soak matzah in warm water to soften for 15 seconds and drain.
  • Add eggs, almond extract, salt and 1 tablespoon brown sugar to the matzah.
  • Add 1 tablespoon butter to the softened apples over medium heat. Once melted, add matzah mixture to the pan and sauté until eggs are set, about 5 minutes.
  • Divide matzah brei between two dishes and top with ricotta cheese and nuts. Sprinkle with more cinnamon and sugar and serve hot.

      I made this today for breakfast and it was so delicious! It was a great switch from plain fried matzo!

    Matzoh brei is a favorite here during Passover – and all year, actually. Hub and Kidzilla love it. We do ours with onion, salt, and pepper. But then maple syrup on top and some sea salt for that salty/sweet thing. It really is good. They might love this one, too – have to try it!
