Mexican Chocolate Latkes with Cinnamon Whipped Cream and Wayfair Hanukkah!

Can latkes be a dessert? Is the Pope Catholic? Err I mean is Andy Cohen Jewish? What I’m trying to say is yes! Mexican Chocolate Latkes are here.

Mexican Chocolate Latkes

I don’t really have much of a sweet tooth. For realz. I’ll take brisket over brownies any day! But if I am having a dessert, it usually is boozy, or chocolate, and definitely homemade. But I was thinking, why not make latkes sweet?(booze was probably involved.) Potatoes are pretty neutral, so why not, right? My friend Shawn had the ingenious idea of adding cocoa and cayenne, and these sweet and spicy latkes were born! Or fried. Whatever.

Mexican Chocolate Latkes

It seemed like the perfect latke to share with my friends at Wayfair! They asked me to create a Hanukkah menu and pretty table setting with some of of their products for their e-magazine. This is the first time they had a whole feature on Hanukkah, so I was pumped and honored!

You can check out the recipes here and the e-magazine here. I’m on page 95! But don’t blame me if you get lost shopping on their site for four hours when you should be working. Not my fault! Now, back to the Mexican Chocolate Latkes.

Mexican Chocolate Latkes

I paired them with a cinnamon whipped cream. If you haven’t made your own whipped cream before, you are missing out. I’m not going to say I pity you, but I’m not not going to say it. You know? It’s easy and delicious and seems fancy. Like put a scoop on your Ben & Jerry’s and cozy up to a Family Feud marathon fancy. The secret to easy homemade whipped cream? Make everything cold. Spatula, bowl, cream. It will whip right up!

Ooh baby.

These are good. Really good. The neutral potato pairs nicely with the slightly sweet and spicy dusting. And the whipped cream…well we already talked about that. Don’t skip it. Or else. Happy Hanukkah!

Ingredients
  

  • Mexican chocolate latkes:
  • 2 1/2 cups shredded 1 pound russet potatoes, washed and peeled
  • 1 egg
  • 2 tablespoons all-purpose flour or matzo meal
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/2 cup canola oil
  • 1/4 cup cocoa powder
  • 1/2 cup powdered sugar
  • 1/8 teaspoon cayenne
  • Cinnamon whipped cream:
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon cinnamon

Instructions
 

  • To make whipped cream, beat cream until medium peaks form using a hand mixer. Add in powdered sugar and cinnamon and beat just until stiff peaks. Refrigerate until ready to use.
  • To make latkes, shred potatoes using a food processor or hand grater into a bowl of water and let sit for 10 minutes. Then, drain water out through a sieve into another bowl. Let water sit to let starch build up. Carefully drain off water and reserve the milky white starch.
  • Wring out as much moisture as possible using cheesecloth or paper towels and place in a large bowl. Then add in eggs, reserved starch, flour, brown sugar, and salt. Stir until combined.
  • In a separate medium bowl, mix together cocoa powder, powdered sugar, and cayenne. Have a small strainer ready. Set aside paper towels over a cooling rack.
  • Heat up a layer 1/4 inch of oil in a large sauté pan over medium heat. You know the oil is ready if a small bit of latke batter sizzles when placed in oil. Scoop 2-tablespoon dollops of the latke mixture into oil and flatten slightly and fry until golden brown, about 2-3 minutes. Flip and fry on the other side. Drain on towels and sprinkle with cocoa mixture.
  • Serve immediately with cinnamon whipped cream!

      The mix that you set aside is added after you fry the latkes or is that mixed into the mix before frying?
