Bagel and Lox Greek Yogurt BowlI love my cookbooks. So much so that I packed up three huge boxes of them to ship to Puerto Rico with me. To give that some perspective, I brought no furniture, a few suitcases of clothes and of course all my Le Creuset Dutch ovens.

I also love breakfast. I make my boyfriend (and myself) breakfast before he goes to work most days. And we savor a leisurely breakfast al fresco on the weekends. Eggs are my go-to in every form. Poached, soft scrambled, over easy. (I haven’t made shakshuka in forever!)

So when a new cookbook all about breakfast arrived at my door, I was excited! Pass the (homemade) Bailey’s and coffee; I curled up on the couch and dug in.

Breakfast is a fun gift for any breakfast lover. I was impressed to see sections on breakfast history (why do we eat eggs anyway? Why was there a boycott on orange juice?) A whole section on mimosa recipe ideas (though their ratio used wayyyy more juice than I’m accustomed to) and definitely some Jew-ish recipes representing, like Apple and Date Strudel with Tahini Honey Glaze or Cinnamon Roll Babka Buns, or Green Shakshuka or Everyhting Bagel Seasoning and Lox Nigiri Sushi.

But one tiny recipe, really just a list, cause my eye. In there “frankenfoods” food mashups section next to Pancake Batter Onion Rings I saw it: Bagel Parfait. I was intrigued! They likened savory yogurt to sour cream on a taco.I use Greek yogurt all the tome in savory recipes, so this made sense to me. They listed to mix Greek yogurt with green onions, lemon juice and salt and pepper, and top with crushed bagel chips, capers and a few pieces of lox. I was immediately inspired to create my own version. Bagel and Lox Greek Yogurt Bowl

I used a bowl so it felt more bowl-like than parfait like. But, I love how pretty and colorful these are! If you want to keep it gluten-free, you could totally use bigger slices of cucumber for dipping too. You’ll never hardly miss the bagel chips.

Wouldn’t it be fun to have a yogurt parfait party with lots of sweet and savory toppings and whiskey-spiked coffee and mimosas and all your girlfriends?! I made two and ate one for breakfast the next day and it was still delicious! Maybe even more so as the yogurt flavors marinated.

Ingredients

  

  • 2 cups Greek yogurt full fat recommended
  • 2 teaspoons everything bagel spice homemade or store bought, plus more for garnish
  • Juice from 1/2 lemon plus a few slices for garnish
  • 2 tablespoons green onion sliced thin
  • 1/2 medium cucumber sliced and halved
  • 2 tablespoons red onion diced
  • 1 tablespoon capers
  • 4 ounces smoked salmon
  • Everything bagel chips

Instructions

 

  • In a medium bowl, combine Greek yogurt with lemon juice, green onions and everything bagel spice.
  • Spoon equally into two bowls. I pushed it up the side a bit to make it look pretty and make room for the toppings!
  • Top with cucumber, red onion, capers and lox. Top with more everything bagel spice and serve with bagel chips and lemon slices.
