When I dip you dip we Spinach Artichoke Dip Latkes!

When I’m coming up with new latkes ideas, I think of other things I like and ask myself, do they go with potatoes. I think almost everything does! Even my controversial Latke Fried Oreos.

I often think of dips or soups or even my favorite fried appetizers like fried pickles for Fried Pickle Latkes! You can latke almost anything!

And speaking of dips, my favorite spinach artichoke dip was the inspiration behind these latest Spinach Artichoke Dip Latkes!

Spinach Artichoke Dip Latkes

With lots of green spinach and chunks of artichoke all dipped into a garlicky sour cream dip, it’s spinach artichoke dip in latke form!

Spinach Artichoke Dip Latkes

Dry everything very well (the spinach, artichokes and shredded potatoes) and add in the potato starch for latkes that are perfectly crispy on the outside but still soft inside.
