Are you totally addicted to avocado toast? Can you not bear to make it through 8 days of Passover without it? Have you ever tried a Middle Eastern inspired matzah version? Are you tired of questions and just want the recipe for Avocado Matzah Toast already???

Avocado Matzah ToastI’ve got a little special treat for y’all today. Do you know my friend Whitney of JewHungry? Now you do! I’m not sure how I first found Whitney, but surely it was our love of Jew pun blog names that drew us together.

I was immediately drawn in by her candid stories and cuter than cute family (that is expanding- Whit is expecting a second bambino!)

Last year, I got to know Whitney even better when we wrote a Passover e-book along with Sarah and Liz. I met Sarah and Liz on a visit to NYC (and got to see Liz just this past week again! I’ll share a recap of my Passover trip soon.) But I’ve never met Whit in person! Crazy. Though it totally seems like we have been friends forever.

Avocado Matzah ToastIt was super fun chatting with Whitney and the girls on our weekly video chats, so I really felt like we were BFF. Plus, I got to see first hand some of Whitney’s creative recipes like Zucchini Fries with Horseradish Aioli and Mashed Potato Bar (um, can I eat a mashed potato bar every night? Cool.)

Now that it’s the middle of Passover, I thought Whitney could use some easy, kid-friendly, chametz-free noshes. Really, couldn’t we all? My go-to breakfast of late is the Pinterest-worthy avocado toast, so I thought why not create a Passover version? This one has a Middle Eastern inspiration with za’atar, and a little kick from crushed red pepper (for my Texas roots).
