Last latkes for the season! And last giveaway. But it’s a good one. Fancy Purple Sweet Potato Latkes with Truffle Yogurt and Arugula, and a giveaway from my Etsy Store!

I hope y’all don’t mind one more latkes recipe. I just can’t help myself! Especially when I saw these ridiculously beautiful purple sweet potatoes at my local HEB. All the nutrients of sweet potatoes, but in a way better color! (Sorry orange). Wouldn’t these have been perfect in my Rainbow Latkes? Blast. Next year. I mean it’s everything you could ask for in a food. Nutritious, and neon.

I made it all fancy schmancy with a Truffle Salt (you can buy some here) cream sauce and a sautéed arugula with a slight kick. Oh man.

    So I had purple latkes on the list too but mine totally failed..haha Until next year! I’m gonna miss the fried food, but man I need a salad.
