Too hard to decide on a single spice because it depends on the type of cooking I am doing and the particular dish. I can’t imagine Italian cooking without garlic; I use zaatar as a great flavor enhancer on fish, and love curry on vegetables and Indian food. If I want to be healthy, I think tumeric.

my favorite spice is paprika- Both my parents are Hungarian so I grew up not only using paprika the way Americans use salt but we also always had a supply of fresh paprika from Hungary. The red color is so vibrant and the flavor of authentic Hungarian paprika is so potent. In my house we take our paprika very seriously!

Cumin tastes like my childhood! My dad put it on nachos with his home-canned, spicy-sweet peppers and extra sharp cheddar, in hummus for a little kick , and it even showed up in my mom’s savory quiches with sausage and mushrooms. Love it 🙂
