Y’all often ask me how I can eat rugelach and challah all day and not be the size of a house. Well, the truth is, I love healthy food and eat healthy most of the time. Not that I’ll ever turn down homemade rugelach. But between running our Judaica store and cooking for the blog, I don’t always have time to make an awesome homemade meal. Sometimes it’s hummus and cucumbers for dinner while I’m editing photos. Kosher Meals with Veestro I tried a bunch of meals and was super impressed. I’m normally not a fan of the taste of frozen meals, but these were delicious. Here is what I tried:

  • Kale and Quinoa Salad with Tahini Dressing

  • Spinach Pie
  • Thai Chick’n Stew
  • Chick’n Quesadilla

The breakfast burrito with potatoes was hearty and full of flavor, thanks to the accompanying salsa. It tasted super cheesy yet is vegan. How do they do it???!! Same with the quesadilla. So cheesy! But I didn’t feel weighed down after eating it.Kosher Meals with Veestro Kosher Meals with VeestroThis kale and quinoa salad with tahini dressing and tofu was right up my alley. I used some leftovers with eggs to make a scramble! (Not vegan, but tasty.) And topped it with more of the salsa from the breakfast taco. But really, not a dog in the bunch. I ate them all!
