I love cooking up Jewish food for y’all, but it can’t be all the schmaltz and bagels and chopped liver all the time! So when the American Diabetes Association and Kitchen PLAY asked me and 11 other bloggers to be a part of their “30 Days of Family Health” I was thrilled to participate! Eating tasty food can be healthy for you too. Growing up my family was very health conscious but still made time for rugelach of course!

The first book the ADA sent me to review is The Smart Shoppers Diabetes Cookbook by Robyn Webb, M.S.. Looking though the recipes, I would have no idea it was a “diet” cookbook. Rigatoni with Sun-Dried Tomatoes, Pesto and Olives, Chicken in Apricot Port Mustard Glaze, and Peanut Butter Sandwich Cookies? Yum! This cookbook also has healthy shopping tips and beautiful photos and offers help reading food labels. It has it all!

 Chickpea Tartine

I couldn’t decide what to make first and bookmarked at least 10 things before I saw the Chickpea Tartines. Sort of like an open-faced hummus sandwich, this recipe is easy and makes a perfect light lunch or snack. I added extra hot sauce for extra kick! Please note that the nutritional information will be different from that found in the cookbook because of this. Yee haw!

This recipe was the perfect early lunch for me; I love the mix of textures and spicy and sour. I fun way to play with one of my favorite Israeli ingredients!

Chickpea Tartines

A fun and easy way to nosh on chickpeas!

Ingredients
  

  • 1 cup chickpeas
  • 1 Tablespoon olive oil
  • 2 Tablespoons lemon juice
  • 2 Tablespoons chopped scallions
  • 1 garlic clove minced
  • 1 Tablespoon Parmesan cheese grated
  • 1/2 - 1 teaspoon hot sauce
  • 4 slices rye or pumpernickel bread toasted
  • ½ cup shredded carrots
  • 4 slices tomato
  • Basil for garnish

Instructions
 

  • Combine all the ingredients for the spread in a food processor or blender and blend until smooth but thick.
  • Divide the spread evenly over each slice of bread. Top each slice with carrots and tomatoes and garnish with basil.
