Matzah Nachos (aka Machos) will get you through Passover! No problem! The perfect cure for your Manischewitz hangovers.

I’ve mentioned before that nachos are one of my favorite foods. So good, right? Salty chips and gooey cheese and lots of guacamole. Naaaachos. Passover is on the horizon, and I’m not one of those anti-matzah people. I love the stuff! For real. Plus, it’s better to embrace it. Don’t fight the matzah! So I thought I would combine the two and make the best Passover snack of all time. Fact. Move over, matzah brei! All my gentile friends love matzah too, so I can’t wait until they get a load of these suckers. 

First, I made pico de gallo. Combine tomatoes, onions, jalapeños, cilantro and lime juice. Season with salt and pepper and set aside.

Preheat oven to 350 degrees F. Then, brush your matzah pieces with melted butter, salt and pepper. Bake for about 10 minutes until browned.

Then add cheese, and bake another 5 minutes until cheese is all melty. Ooooh yeah.

Top with goodies of your choice! I used pico de gallo, avocado, Greek yogurt and lots of cilantro. Beans or salsa are great too! Use what you like.

Ingredients
  

  • 2 plum tomatoes, small diced
  • ¼ medium white onion, small diced
  • ½ jalapeño, small diced
  • 2 tablespoons cilantro, minced, plus more for garnish
  • Juice from 1/2 lime
  • Salt and pepper
  • 2 pieces matzah,
  • 2 tablespoons butter, melted
  • 1/2 cup cheese, cheddar or your favorite, shredded or in pieces
  • 1/2 avocado, diced or guacamole
  • 1/4 cup Greek yogurt or sour cream

Instructions
 

  • First, make the pico de gallo. Combine tomatoes, onions, jalapeños, cilantro and lime juice in a small bowl. Season with salt and pepper to taste and set aside.
  • Preheat oven to 350 degrees F. Spread the matzah pieces on a foil-lined baking sheet. Brush the matzah pieces with butter and sprinkle with salt and pepper. Then break into large pieces. Bake for about 5-7 minutes until browned.
  • Then add cheese evenly to the matzah pieces, and bake about 5 minutes or until cheese is all melty. Ooooh yeah. Careful not to let it burn!
  • Top with goodies of your choice! I used pico de gallo, avocado, Greek yogurt and lots of cilantro.

    The recipe is awesome except for one problem: Broiling the matzah and the cheese after baking it is a bad idea. Or put it this way, the broil instructions should say “broil for 1-2 minutes.” At 3 ½ minutes, I had seriously burnt matzah and cheese. Parts of it were salvageable. I then baked 2 more sheets of broken matzah with melted butter and cheese and it came it out much better. A great idea – the recipe just needs a little tweaking.

      Glad you liked it! Good point, I changed the broil step to keep baking, which is safer from burning.
