Purim recipes — hamantaschen (sweet and savory), Persian-Jewish dishes, seudat Purim (the festive meal), and food themed around hidden things. The most playful holiday in the Jewish calendar; the recipes should be too.

The non-negotiable: hamantaschen. Triangle-shaped, jam-filled cookies named after the villain Haman. Try the classics, the chocolate version, the halva hamantaschen, or the wildcard savory caramelized onion hamantaschen for the appetizer board. For the seudah (the Purim feast), Persian-Jewish dishes show up — Esther’s Persian roots — plus brisket, kugel, and anything that holds up to a long, wine-soaked dinner.
