Pre-heat oven to 325 degrees F.
Line an 8x8 inch pan with parchment paper, leaving a little overhang on the sides.
In a large bowl, mix together the crust dry ingredients: sugar, flour and salt. Then add the vanilla and butter and mix with your hands, a pastry cutter or hand-mixer on low until it resembles wet sand.
Press mixture evenly into the bottom of the pan and bake for 12-15 minutes until light brown.
Meanwhile, prep your filling. Mix together lemon juice, brown sugar, flour and cardamom in a large bowl (I used the same bowl for the crust). Then add apples and toss until evenly coated.
To make the streusel, mix together all the ingredients with your hands or a spoon until you have crumbly pieces. If the mixture is a little thin, add a little more flour.
When the crust is ready, top evenly with apple pieces and top that evenly with streusel crumbles. Bake for 35 minutes until apples are bubbly and streusel is golden brown.
Let cool for 30 minutes at room temperature, then cool overnight in the refrigerator (or at least a few hours).
Lift out of the pan using parchment paper and cut into 12 pieces (or whatever you like!)
Make the drizzle by whisking together powdered sugar and honey. Add a splash of water or milk if needed to make a glaze for drizzling.
Drizzle glaze all over bars and sprinkle with sesame seeds. Eat!
You can refrigerate the un-glazed bars for up to a week, or freeze for up to two months. Defrost and glaze before serving.
