Apple Tahini Streusel Bars

Ingredients
  

  • For crust:
  • 1/4 cup Simple Truth Organic Granulated Sugar
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon Simple Truth Organic Madagascar Vanilla
  • 1/2 cup cold unsalted butter cut into pieces (I grate mine with a large-hole cheese grater!)
  • For apple filling:
  • 2 large Granny Smith apples peeled and sliced into 1/4 inch slices, about 3 cups
  • 2 teaspoons lemon juice
  • 1/2 cup Simple Truth Organic Light Brown Sugar packed
  • 2 tablespoons all-purpose flour
  • 2 teaspoons cardamom cinnamon works well too
  • For tahini streusel:
  • 1/2 cup flour you may need a little more
  • 1/4 cup Simple Truth Organic Light Brown Sugar
  • 2 tablespoons Simple Truth Organic Tahini
  • 2 tablespoons melted butter
  • 1/8 teaspoon salt
  • 1/4 teaspoon cardamom
  • For honey drizzle:
  • 1/2 cup Simple Truth Organic Powdered Sugar
  • 1 tablespoon Simple Truth Organic Manuka or Orange Honey
  • A splash of water or milk
  • Sesame seeds for garnish

Instructions
 

  • Pre-heat oven to 325 degrees F.
  • Line an 8x8 inch pan with parchment paper, leaving a little overhang on the sides.
  • In a large bowl, mix together the crust dry ingredients: sugar, flour and salt. Then add the vanilla and butter and mix with your hands, a pastry cutter or hand-mixer on low until it resembles wet sand.
  • Press mixture evenly into the bottom of the pan and bake for 12-15 minutes until light brown.
  • Meanwhile, prep your filling. Mix together lemon juice, brown sugar, flour and cardamom in a large bowl (I used the same bowl for the crust). Then add apples and toss until evenly coated.
  • To make the streusel, mix together all the ingredients with your hands or a spoon until you have crumbly pieces. If the mixture is a little thin, add a little more flour.
  • When the crust is ready, top evenly with apple pieces and top that evenly with streusel crumbles. Bake for 35 minutes until apples are bubbly and streusel is golden brown.
  • Let cool for 30 minutes at room temperature, then cool overnight in the refrigerator (or at least a few hours).
  • Lift out of the pan using parchment paper and cut into 12 pieces (or whatever you like!)
  • Make the drizzle by whisking together powdered sugar and honey. Add a splash of water or milk if needed to make a glaze for drizzling.
  • Drizzle glaze all over bars and sprinkle with sesame seeds. Eat!
  • You can refrigerate the un-glazed bars for up to a week, or freeze for up to two months. Defrost and glaze before serving.
