Chicken Schnitzel Wrap with Everything Bagel Ranch

Chicken Schnitzel Wrap with Everything Bagel Ranch is that comforting, easy meal you have been craving!

Ingredients
  

  • 3 chicken thighs or two breasts about 1.5 pounds
  • ½ cup all-purpose flour
  • 1 egg whisked
  • 1 cup matzah meal or Panko breadcrumbs
  • 1 teaspoon kosher salt divided
  • 1/2 teaspoon fresh cracked black pepper divided
  • Oil for frying
  • Two large wraps
  • Garnishes: lettuce tomatoes, red onion, cucumber, lemon, za'atar etc.
  • Everything Bagel Ranch use the parve version if you keep kosher

Instructions
 

  • Place a large piece of plastic wrap on a counter or cutting board and place the chicken pieces down, spaced a few inches apart.
  • Cover chicken with more plastic wrap and pound to about ¼ inch thin with a mallet or heavy pan. Pound out your quarantine anger and frustrations! Dry the chicken well.
  • Put the flour, whisked egg and matzo meal each in three separate shallow bowls. Season the flour with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper, and season the matzo meal with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Some sesame seeds are nice in there too if you have them!
  • Heat ½ inch oil in a 12-inch saute pan over medium heat until 375 degrees F. Set aside a cooling rack.
  • Meanwhile, coat each chicken breast in flour, shake it off, then egg, drip it off, then matzo meal. Use alternative hands or tongs for the dry and wet dipping so your hands stay clean-ish!
  • Fry chicken in oil 2-3 minutes per side or until golden brown. Chicken should sizzle when you add it to the pan.
  • Cool the chicken slightly on a cooling rack.
  • Drain nearly all of the oil from the pan and fry the wraps on both sides over high heat until slightly charred. This step is optional but adds more flavor and crunch.
  • Slice the chicken and place in the wrap with toppings. Top with Everything Bagel Ranch - use the parve version if you keep kosher.
